How It Works

Steam Peeling Technology Built for Production Scale

The VegTech steam peeler uses a fully enclosed, high-pressure steam chamber to loosen vegetable and fruit skins rapidly and uniformly. The vessel rotates during the steam cycle to ensure all-around exposure, then releases pressure in a controlled burst — the sudden depressurization causes the skin to rupture and separate cleanly from the flesh.

A built-in condensate removal system prevents insulating moisture buildup that would otherwise reduce peeling efficiency. The result is consistent peel removal with minimal product loss, batch after batch.

Step by Step

The 4-Stage Peeling Process

1. Loading & Weighing Raw produce is loaded into the stainless-steel weighing hopper. The PLC system records batch weight and manages cycle timing automatically.

2. High-Pressure Steam Injection Steam is injected into the sealed pressure vessel at up to 15 bar (8 bar for delicate fruits). The vessel rotates during treatment for uniform, all-around exposure.

3. Depressurization & Peel Separation Rapid steam release creates a controlled flash that lifts and strips the loosened skin without cooking the flesh underneath.

4. Discharge & Transfer Peeled product exits via screw elevator and moves directly to washing, cutting, or packaging — fully compatible with VegTech complete processing lines.


Product Line

VegTech offers two distinct steam peeler lines to match your produce type and production volume. Both series are constructed from AISI 304 stainless steel and controlled by a fully automated PLC system for repeatable, hands-free operation.


DORUK Series — Ordinary Steam Peeler

The DORUK line is designed for high-throughput peeling of firm root vegetables — primarily potatoes, carrots, and beets. Six models span 125 to 1,250 liters of vessel volume, scaling from 1.5 tons per hour for mid-size processors up to 28 tons per hour for large industrial production lines. All models operate at a maximum steam pressure of 15 bar and run on 380V / 50 Hz power.

Gentle Steam Peeler

The Gentle Steam Peeler is specifically engineered for soft and delicate produce — peaches, apples, pears, tomatoes, and similar fruits — where standard high-pressure cycles would damage the flesh. It operates at a reduced 8 bar steam pressure for fruit peeling, while retaining full 15 bar capability for root vegetables. Four models are available, covering 3 to 20 tons per hour for potatoes and 3 to 11.5 tons per hour for peaches.
